    Profile

A little off the beaten tourist track, the Romans district is undoubtedly becoming the last refuge of Annécians who want to meet up with their friends. Aurore Mainfroy and Olivier Vitte have created an "instinctive address" with no fuss. In the evenings, it's "à la bonne franquette", under the outdoor gazebo, with shared dishes featuring spicy Mediterranean flavours. Olivier takes us on a journey between Israel, Lebanon and southern Italy with a certain talent. A converted self-taught chef, he shares his passion for family cooking that's eco-responsible, but not without flavour: the chef's mustabal, a delicious and regressive sweet potato gnocchi with wild garlic pesto, and if you'd like an introduction to Bulgarian flavours: the banista with its brick pastry, feta spinach and mozzarella, or the snail croquilles by the very Savoyard Philippe Héritier. As for desserts, the aubergine and white chocolate duo, topped with black garlic, brownie and olive oil, is simply stunning. The wine list is short and very inspired. Aurore, who also teaches ayurveda in her spare time, will take you on a guided tour of the many different grape varieties.
