These are traditionally known as Tartifle fritters, the Savoyard term for potato. The fritters can be enjoyed alone or served with a green salad. 


  • 1kg potatoes
  • 3 tbsp plain flour
  • 3 eggs
  • salt and pepper 


  • Peel the potatoes and grate them into a large mixing bowl. Add salt and pepper to taste. Add the flour and eggs. Mix well. Option: try adding a thinly sliced onion or some parsley.
  • Heat up the oil in a frying pan, or in a deep fryer, spoon the mixture into small fritters and fry until they turn golden brown on each side.
  • Serve with a green salad.
