«Every evening, with my team of eight chefs, we test new ideas, continually pushing our creativity». Young chef Clément Bouvier draws his inspiration from nature, at the heart of the forest. He loves to walk in the woods, pick local plants and incorporate them into his dishes. His cuisine stars local seasonal produce and fresh herbs in summer. He creates contemporary, plant orientated dishes that leave diners speechless. The decor and service is also nature inspired. 400 tree trunks from the Bauges region create a muted forest atmosphere. Foliage canvasses cover the ceiling and a speckled carpet evokes the forest floor. Nothing has been left to chance, from the walnut furniture to the menu design. A tray of appetizers served on a bed of lichen and moss complete the experience!

After earning his first Michelin star in 2019, Clément Bouvier was awarded a “Macaron Vert” by the famous guide. A symbol of sustainable cuisine focused on local terroir, seasonality of produce and respect for nature, this five-leaf clover rewards chefs who strive to combine gastronomy and ecology. No problem for Clément, who has always aimed to highlight produce from the Savoie!
