Lescheraines dairy cooperative collects 7,000 litres of milk per day. Half of this milk is used to make the gruyere cheese called “Le Margériaz” and the rest is for Tome des Bauges cheese. Tome des Bauges cheese, which is very different from the Tomme de Savoie cheese, is the 39th cheese made with cows’ milk that has received the registered trademark of A.O.P. (Controlled Designation of Origin). Group tours are organised: you can see cheese being made and the cheese maturing cellars.
