Fish

Delicate delights

Savoie Mont Blanc’s rivers are full of trout and its lakes are home to many species of fish, including members of the salmon family, such as lavaret and arctic char, and coarse fish, such as pike or perch. This wide range has inspired a large number of original and inventive dishes that are superbly accompanied by a delicious local white wine (Chignin-Bergeron, Apremont, Ripaille, Marin, etc).

Lavaret

A member of the salmon family that lives at the bottom of the large Alpine lakes, lavaret can grow to lengths of up to 40 cm and weigh 1 kilo. Its delicate white flesh is greatly appreciated by gourmets.

Perch filets

A common species in the three largest Alpine lakes, perch is mostly fished in summer. Little perch, or "perchette", are most frequently eaten whole in the form of lake whitebait.

Char

A noble fish with a wonderful flavour, char are mostly found in large or high-altitude lakes and, occasionally, rivers, as they prefer cold, deep waters. A member of the salmon family, its origins go back to the Quaternary ice ages.
