Polenta (or polente) is a kind of cornmeal, which is what gives it its yellowy-orange colour. Available both finely and coarsely ground, it is quick to prepare and can be eaten as a mash, as a bake, or cut into cubes and fried. 

 Ingredients  

  • 250g polenta
  • 1 litre milk
  • 60g butter
  • salt 

 METHOD

  • Salt the milk and bring it to the boil.
  • Gently pour in the polenta and leave it to cook for around 3 minutes while whisking continuously.
  • Pour the cooked polenta into a dish and leave it to cool.
  • You can then cut it into rectangles and fry these in butter until they turn slightly golden.
  • Polenta is a perfect side dish for meat stews.
